EVOO Trial Summary
This trial will study the effect of extra virgin olive oil on heart health by measuring cholesterol levels and inflammation markers in people with cardiovascular disease. The olive oils used will differ in polyphenol concentration, and investigators expect that the oil with higher polyphenol levels will have a greater positive effect.
